Tabbouleh Salad


1 cup bulgur wheat
3/4 cup boiling water
2 tomatoes, seeded and chopped
2 cucumbers, peeled and chopped
1 bunch green onions, chopped
1/2 cup black olives, chopped
1/2 cup feta cheese
8 Tbs. olive oil
4 Tbs. fresh parsley, chopped
1 tsp. Flavorganics Peppermint Extract
salt and pepper to taste


In a large bowl pour boiling water over bulgur wheat and let stand for about one hour or until most of the water has been absorbed. Drain any excess water from the bowl. Mix all other ingredients into bulgur wheat. Add salt and pepper to taste. Cover and chill. Serve with toasted pita wedges.
